Gourmet Kitchen Class Notice 1/02 – Qingdao Three-delicacies Dumplings

Dear OACA Members,

For northerners, during the New Year holidays, dumplings are a must-have on the table. The whole family rolls dough and make dumplings together.  Being a seaside city, Qingdao has a unique cuisine – three-delicacies dumplings.  The three delicacies are seafood, meat, and vegetables. Today we will show you two seafood varieties, shrimp and scallops.

Today’s Dish:【Qingdao Three-delicacies Dumplings】

Date/Time:1/02 (Saturday) 4:00-5:00 PM

Instructor’s background:

Qiu Hanxue, Zhou Xia, and Qiu Tong (family group): the couple used to live and work in the beautiful city of Qingdao. They have been to the United States for many years and will share their joy and happiness with neighbors and friends.


Ingredients and preparation:

Dough:

2.5-3 lbs of flour, mix with cold water to make dough, knead slightly, and keep it soft, let it sit for 30 minutes

Filling:

0.5 pound of fresh shrimp or fresh scallops,

1 pound of ground pork,

0.5 lb chopped leeks,

3 sticks of green onion,

1 pound cabbage (chopped, no salt, do not squeeze out water),

Ginger powder,

Sichuan pepper oil,

Salt,

Sesame oil


Kitchenware/Utensils: Bowl to mix dough, cutting board, small rolling pin, tray to hold dumplings, large pot to cook

北方人过年过节,饺子是餐桌上的必备美食。全家人一起擀面皮,包饺子其乐融融。青岛靠海,就出现了一种独特的吃法 -- 三鲜水饺,三鲜是海鲜,肉鲜,和菜鲜。今天为大家展示的是虾仁,扇贝两种海鲜水饺。

准备原料:

饺子皮: 面粉2.5-3 磅,凉水和面,面团揉好稍软为好,醒面30分钟+.

馅料:

鲜虾仁或鲜扇贝 0.5磅,

猪肉馅 1 磅,

切碎的韭菜 0.5磅,

小葱 3 颗,

白菜1 磅(切碎,不放盐,不汲水),

姜粉,

花椒油,

香油


厨具/器皿:盆,擀面板,小擀面杖,摆饺子的托盘, 大锅
