Claypot Rice with Cured Pork

Dear OACA Members,

Claypot Rice is a cooking from Southern China.  There is no set recipe for claypot rice.  You can adjust to fit your personal preference.  This one is made from cured pork, Chinese sausage, cured duck and vegetables.  We will learn this Hunan-style claypot rice with the instructor who is from that region.  It is simple and easy to learn.  The smell of the dish will make you hungry!

Instructor’s background：

Quan Xiaomin, from Hunan, loves life.  She is sincere, enthusiastic, and warm as sunshine.  She is great at cooking, especially Sichuan and Hunan cuisine.  Her hand-made smoke cured pork is truly unique!

Ingredients and preparation:

Cured pork

Chinese sausage

Cured duck (or chicken)

1 egg

Chinese flowing cabbage (or baby Bok Choy)

Shallots

Coriander

Soak 1-2 cups of Thai jasmine rice 1 hour in advance

Kitchenware/Utensils:  Ordinary kitchen wares

腊味煲仔饭是著名美食，是以腊肠、腊肉、腊鸭肉、 葱花+香菜为原材料制作而成的食物。 煲仔饭没有固定的口味，根据个人的喜好口味都可以调整。今天来跟晓敏老师学做这道湘味特色的煲仔饭，简单易学，粒粒飘香，色香味俱全，让你瞬间味蕾大开！

全晓敏，热爱生活的湘妹子，对人真诚热情，像阳光一样温暖。擅长烹饪美食，尤其是四川菜、湖南菜，她亲手制作的腊味色香味俱全，堪称一绝！！

准备原料 - 腊肉，腊肠，腊鸭(鸡) ，鸡蛋1个，菜心，青葱，香菜。泰国香米1-2杯提前泡1小时+。
