Gourmet Kitchen Class Notice 6/5 Korean Thin Sliced Beef Short Ribs & Scallion Pancake 韩式烤牛仔 & 千层葱油饼

Dear OACA Members,

We have tasted several southern dishes in the past few weeks. This week we are going to turn our attention to Northern cuisine.

Today's Dish:【Korean Thin Sliced Beef Short Ribs & Scallion Pancake】

Date/Time:6/5 (Saturday) 4:00-5:00 PM

Instructor’s background:

Wendy Chen, a retired medical staff, has many talents including singing, dancing, and outstanding cooking skills.  She and her husband have been in the United States for decades, and they have raised three loving sons, and have many grandchildren.  Wendy is the vice president of OACA and is a devoted charity member. The evergreen aerobics exercise led by her is well received by everyone.

Ingredients for Korean Thin Sliced Beef Short Ribs:

4 pounds of BBQ short ribs,

1 kiwi,

1 or 3/4 cup of soy sauce,

1/4 cup of garlic,

half a large onion (sweet onion),

White sesame seed,

4 tablespoons sesame oil,

4 green onion,

a little pepper powder,

1/3 cup sugar,

1/4 cup dark soy sauce.


Ingredients for scallion pancake (about 8 pieces)

300g of general purpose flour (2 cups + 1/3 cup + 1 teaspoon),

3 grams of salt (1/2 teaspoon),

195ml of warm water (104 degrees F),

5ml of vegetable oil.


Also prepare the filling:

24g general purpose flour,

2 teaspoons salt,

10g chopped green onion,

50 ml vegetable oil.

Optional: 2 teaspoons white pepper powder, peppercorn powder.


Kitchenware/Utensils:  Ordinary kitchen wares

一,韩式烤牛仔骨


准备材料:4磅排仔骨(bbq short ribs),1个奇异果 (kiwi),1或3/4 杯 生抽王(soy sauce),1/4杯蒜头(garlic),半个大洋葱(sweet onion),白芝麻(whit sesame seed),4汤匙芝麻油(sesame oil),4根葱(green onion),少许胡椒粉(pepper powder),1/3杯糖(sugar),1/4杯老抽王(dark soy sauce)。


二,千层葱油饼 (约8个量)

准备材料: 中根面粉300g(2杯+1/3 杯+1茶匙),盐3克(1/2茶匙),温水195ml(104度F),5ml植物油。


另外准备 馅料:

中根面粉24g,盐2茶匙, 葱花10 g, 植物油50 ml.  可选:2茶匙白胡椒粉,花椒粉.
