Dear OACA Members,

"Mapo Tofu with Minced Pork" is a famous Sichuan cuisine.  The art of this dish is in its contrast.  White and tender tofu is decorated with green onion and mince pork, and a circle of bright red chili oil, likes jade inlaid with amber.  The dish is hot, spicy, and a bit numbing, but very tender.

The popular "Steamed Chicken with Chili Sauce" is a cold dish in Sichuan style. The color is attractive, the seasoning is rich, and it combines hot, spicy, tender, and silky all in one.

Both dishes will make your mouth run!

Ingredients for Mapo tofu:

Soft tofu (you can choose tofu with different hardness at will)

Chili bean sauce (if not available, use black bean hot sauce instead)

Sichuan pepper powder (or Sichuan pepper oil)

Chili powder

Pickled black bean

Starch

Garlic slices

Shallots


Ingredients for Steamed Chicken with Chili Sauce:

Chicken leg quarters

Ginger slices

Cooking wine

Chili oil

Pepper powder (or pepper oil)

Cooked sesame

Cooked peanuts (can be crushed)

Garlic minced

Shallots

Soy sauce

Vinegar

Sugar

Salt

麻婆豆腐是川菜名品,此菜以“烧”法烹之,在雪白细嫩的豆腐上、青葱红肉点缀,外围一圈透亮的红油,如玉镶琥珀,具有麻、辣、烫、嫩、酥、香、鲜的独特风味。
大名鼎鼎的“口水鸡”是一道四川风味的凉菜。色泽诱人,佐料丰富,集麻、辣、鲜、香、嫩、滑于一身,想想都让人直咽口水。

准备原料

一,麻婆豆腐食材:嫩豆腐(可随意选不同硬度的豆腐),郫县豆瓣酱(若没有可用老干妈豆豉辣酱代替),花椒粉(或花椒油),辣椒粉, 豆豉, 淀粉,蒜片, 青葱。

二, 口水鸡食材:带骨鸡后腿(chicken leg quarters), 姜片, 料酒, 辣椒油, 花椒粉(或花椒油),酱油,盐, 熟芝麻, 熟花生米 (可压碎), 白糖, 醋, 蒜末, 青葱。
